- 12 cups spinach leaves
- 24 strawberries, halved
for the dressing:
- 1/2 cup nan-fat plain yogurt
- 1/4 cup orange juice concentrate or juice from 2 oranges
- 2 tbsps poppyseeds
- 1 tbsp honey
- salt and pepper to taste.
Procedure:
- In a bowl, whisk together the first-four ingredients for the dressing. Season with salt and pepper. Set aside.
- Put the spinach and strawberries in a bowl. Cling wrap. Chill until ready to use.
- Drizzle with the dressing, just before serving. Toss well.
