- a cup each of red & yellow watermelon, sliced & chilled
- 200 grams romaine lettuce
- 1/2 cup peanut cracker nuts
- a handful each of cilantro and mint leaves
for the dressing:
- 1/2 cup extra virgin olive oil
- a tbsp of shallots
- 2 tbsps calamansi juice
- salt & pepper to taste
Procedure:
- Combine ingredients for the dressing. Mix well.
- Toss the rest of the ingredients in a bowl. Drizzle dressing. Combine well.
- Serve immediately.
