Yellow and Red Watermelon Salad with Cilantro and Mint

Ingredients:
  • a cup each of red & yellow watermelon, sliced & chilled
  • 200 grams romaine lettuce
  • 1/2 cup peanut cracker nuts
  • a handful each of cilantro and mint leaves

for the dressing:
  • 1/2 cup extra virgin olive oil
  • a tbsp of shallots
  • 2 tbsps calamansi juice
  • salt & pepper to taste

Procedure:
  1. Combine ingredients for the dressing. Mix well.
  2. Toss the rest of the ingredients in a bowl. Drizzle dressing. Combine well.
  3. Serve immediately.
